You may not have rythem but you’ve sure to have soul! Ha. This menu is in honour of my father who lived in New Orleans his whole life until Hurricane Katrina up-routed him to come to Canada. This was one of his favourite meals. He loved to dance and Soul Train was a celebration of black culture. And try your best NOT to dance to Soul Train or Love Train when it comes on the radio. JUST TRY!

Download all the information you’ll need for the class including the pre-class prep list included in the agenda and the recipes. It is ideal that you print those out. Pre-prep is key as we have an amazing couple of items but it does depend on how much is done before hand. Plan for about 30-45 mins of prep. Don’t forget to pick up a bottle or two of our wine pairings down below!

This is the perfect cocktail to get our souls a little hug.

  • 2 oz bourbon

  • 1/2 oz fresh lemon juice

  • 3/4 oz simple syrup*

  • 2 dashes Angostura Bitters

  • Chilled Champagne, Cava, or Prosecco

Instructions

  • Pour bourbon, lemon juice, simple syrup, and bitters in a champagne glass or a similarly sized cocktail glass.

  • Stir gently and top with Champagne, Cava, or Prosecco. (I used Prosecco)

  • Garnish with a candied or fresh lemon slice.

  • Cune Cava - 812216 A beautiful sparkling wine from Spain. This Cava displays fruit notes and nuances of bottle aging. There is fresh acidity for balance with a creamy texture and lingering finish. The bubbles and acidity in this wine will leave your palate refreshed as you enjoy this perfect pairing to the fried chicken and baked mac and cheese!

Pronounced as a French word, lagniappe (lan-yap) is a Cajun-French inspired noun that means “a little extra.” We won’t be covering this in class but you can make this the night before to add to your meal. We wanted you to have a little sumpin’ sumpin’ extra.
