Welcome to the Luau!

It’s time to cross the ocean to Hawaii and treat yourself to a Hawaiian inspired holiday you won’t forget. Heck you deserve it! So get out your best Hawaiian garb and spray coconut spray in the air and take a deep breath and let’s get cookin.

Download all the information you’ll need for the class including the pre-class prep list (roughly 30 mins prep) found on the agenda. Pre-prep is key as we have an amazing menu but it does depend on how much is done before hand. Print out the recipes if you can.

  • Heads up there is a chicken wing marinade and rib marinade you’ll want to do the night before. We’ve also suggested you can either cut your fruit before or after class.

Chef Joey will take us through each item step-by-step. No one will be left behind. We welcome cheers and heckling of Chef Joey, and others!

Mai Tai

Ingredients:

  • 1 1/2 ounces white rum

  • 3/4 ounce orange curaçao or GM or Triple Sec

  • 3/4 ounce lime juice, freshly squeezed

  • 1/2 ounce Amaretto or 1 tsp almond extract

  • 1/2 ounce dark rum

  • Garnish: lime wheel

  • Garnish: mint sprig

Instructions:

  1. Add the white rum, curaçao, lime juice and Amaretto into a shaker with crushed ice and shake lightly (about 3 seconds). No worries if you don’t have a shaker!

  2. Pour into a double rocks glass.

  3. Float the dark rum over the top.

  4. Garnish with a lime wheel and mint sprig.

Wine Pairing

Chef Joey has paired the tasty treats you are about to cook with a wine pairing to serve with it. You can pick up a bottle at Northmount Liquor for a 15% discount. Tell them Chef Joey sent you. They do have a delivery service as well ($10).
